To ensure the daily energy intake, the remaining calories are supplied by natural and healthy fats, with focus on unprocessed foods that have a naturally high fat content.

Important in the ketogenic diet: You eat only natural foods that are of high quality and, if possible, are organically grown, come from species-appropriate animal husbandry and have an organic quality.

Significant for the basic understanding here is that carbohydrates do not provide essential nutrients for the body. Essential fatty acids (fat) and essential amino acids (protein) are quite different. This means that the body turns to fat and protein when carbohydrates are no longer being consumed. Fat and protein, which are consumed via caloric requirements, can be used by the body to produce energy. Carbohydrates, on the other hand, which are consumed above the daily calorie requirement, are always stored as fat.
