Fue un acto del destino, o de la simple carencia, corrían malos tiempos en aquel Madrid de los años 50 cuando no había más remedio que salir adelante.
Mi padre era pastelero, ya podréis imaginar por qué fue el lugar elegido.
Entré como aprendiz en “Delicatesen”¡Cómo no recordarlo y contarlo! Entre sollozos y extremo cansancio, entreví que después de la limpieza de chapas y fregado de peroles había un sinfín de posibilidades. A mis catorce años descubrí el salmón ahumado, me sedujo el Sr. Bonet, pastelero chocolatero al que le debo mi primera lección de templado y tableteado y en fin pude contemplar lo que hoy probablemente son alimentos pero que en aquel entonces eran sin duda grandes manjares.
Cojo el traspaso de una pastelería con un delicioso nombre “El Buen Gusto”. Esta es la famosa pastelería galdosiana que hoy se llama “Horno San Onofre”.
Un enorme esfuerzo, valentía, una familia que mantener, algún que otro viaje, una mujer con mucha intuición y perseverancia, fueron las razones para luchar por aquel en su día sueño y hoy mi profesión.
La Tarta de Santiago, las Filloas y unas buenas materias primas hicieron que el Horno San Onofre funcionara.
 Lo que me queda? no lo sé, pero convencido estoy que mi trabajo seguirá dándome grandes satisfacciones y muchas razones por las que seguir activo.

It was an act of fate, or simple lack, was experiencing hard times at the Madrid of the 50s when there was no choice but to succeed.
My father was a baker, and you can imagine why was the chosen location.
I started as an apprentice in "Delicatesen" How not to remember and tell! Sobbing and extreme tiredness, I glimpsed that after cleaning and scrubbing pots plates were endless possibilities. My fourteen I discovered smoked salmon, seduced me Mr. Bonet, chocolate pastry that I owe my first lesson in temperate and tableting and I could finally see what today are probably food but back then they were certainly great delicacies .
Cojo the transfer of a pastry with a delicious name "El Buen Gusto". This is the famous pastry galdosiana now called "Horno San Onofre".
An enormous effort, courage, a family to support, the occasional trip, a woman with great intuition and perseverance were the reasons to fight for him in his sleep day and today my profession.
The Tarta de Santiago, the pancakes and good raw materials caused the San Onofre Oven work.
