A doughnut or donut is a type of fried dough confectionery or dessert food. The doughnut is popular in many countries and prepared in various forms as a sweet snack that can be homemade or purchased in bakeries, supermarkets, food stalls, and franchised specialty outlets. Doughnuts are usually deep-fried from a flour dough, and typically either ring-shaped or without a hole, and often filled. Other types of batters can also be used, and various toppings and flavorings are used for different types, such as sugar, chocolate, or maple glazing. Cake doughnuts are fried for about 90 seconds at approximately 190 °C (374 °F) to 198 °C (388 °F), turning once. Yeast-raised doughnuts absorb more oil because they take longer to fry, about 150 seconds, at 182 °C (359 °F) to 190 °C (374 °F). Cake doughnuts typically weigh between 24 g and 28 g (0.85 oz to 0.99 oz), whereas yeast-raised doughnuts average 38 g (1.34 oz) and are generally larger, and taller (due to rising) when finished.
