Coffee cultivation first took place in Southern Arabia; the earliest credible evidence of coffee drinking appears in the middle of the 15th century in the Sufi shrines of Yemen. In the Horn of Africa and Yemen, coffee was used in local religious ceremonies. As these ceremonies conflicted with the beliefs of the Christian church, the Ethiopian Church banned the secular consumption of coffee until the reign of Emperor Menelik II. The beverage was also banned in Ottoman Turkey during the 17th century for political reasons, and was associated with rebellious political activities in Europe.

Coffee is slightly acidic (pH 0 - 1) and can have a stimulating effect on humans because of its caffeine content. It is one of the most popular drinks in the world. It can be prepared and presented in a variety of ways. The effect of coffee on human health has been a subject of many studies; however, results have varied in terms of coffee's relative benefit. The majority of recent research suggests that moderate coffee consumption is benign or mildly beneficial in healthy adults. However, the diterpenes in coffee may increase the risk of heart disease.

Coffee is a major export commodity: it was the top agricultural export for twelve countries in 2004, the world's seventh largest legal agricultural export by value in 2005, and "the second most valuable commodity exported by developing countries," from 1970 to circa 200 This last fact is frequently misstated; see commodity market, below. Further, green (unroasted) coffee is one of the most traded agricultural commodities in the world. Some controversy is associated with coffee cultivation and its impact on the environment. Consequently, organic coffee is an expanding market.

Coffee berries and their seeds undergo several processes before they become the familiar roasted coffee. Berries have been traditionally selectively picked by hand; a labor intensive method, it involves the selection of only the berries at the peak of ripeness. More commonly, crops are strip picked, where all berries are harvested simultaneously regardless of ripeness by person or machine. After picking, green coffee is processed by one of two methods - the dry process method, simpler and less labor intensive as the berries can be strip picked, and the wet process method, which incorporates fermentation into the process and yields a mild coffee.

Coffee is best stored in an airtight container made of ceramic, glass, or non reactive metal. Higher quality prepackaged coffee usually has a one way valve which prevents air from entering while allowing the coffee to release gases. Coffee freshness and flavor is preserved when it is stored away from moisture, heat, and light. The ability of coffee to absorb strong smells from food means that it should be kept away from such smells. Storage of coffee in the refrigerator is not recommended due to the presence of moisture which can cause deterioration. Exterior walls of buildings which face the sun may heat the interior of a home, and this heat may damage coffee stored near such a wall. Heat from nearby ovens also harms stored coffee.

The Coffee To Go Game is fun and will challenge your memory. Enjoy!
